Protein Baked Granola

This quick and easy bake is perfect for meal prep. Whether you eat it cold or warm, it’s a great high-protein snack or breakfast option that hits the spot.

Ingredients

  • 1 cup rolled oats
  • 2 scoops (approx. 60g) protein powder
  • 2 tbsp sugar-free syrup or honey
  • 1 large egg white (or equivalent liquid egg white)
  • 1 tsp vanilla extract
  • 2 tbsp nut butter

Choice of yum bits such as sultanas, chopped nuts, hemp seeds, and shaved coconut. 

Instructions

  1. Melt the nut butter in the microwave (30-second intervals) or on the stovetop over low heat.
  2. Add all ingredients to a mixing bowl and combine well.
  3. Transfer to a baking dish or ramekin.
  4. Bake at 180°C for 20 minutes in the oven (or air fry until golden).
  5. Allow to cool slightly before slicing into 3 serves.
