Baked Carrot Cake Oat Cake

This carrot cake-inspired bake is soft, spiced, and layered with protein. Perfect for breakfast or a satisfying snack.

Ingredients

  • 200g banana
  • 140g oats
  • 60g protein powder
  • 1 tsp cinnamon
  • 200ml skim milk
  • 80g grated carrot
  • 1 tsp baking powder
  • Pinch of salt
  • Topping:
  • 150g 0% fat Greek yogurt
  • 10g chopped walnuts

Method

  1. Preheat oven to 180°C.
  2. Mash the banana in an oven-proof dish. Stir in oats and protein powder.
  3. Add milk, cinnamon, baking powder, and grated carrot. Mix until combined.
  4. Dollop Greek yogurt on top and swirl gently. Sprinkle with chopped walnuts.
  5. Bake for 35–40 minutes until set and golden.
