Blueberry Almond Baked Oats

A warm, lightly sweetened oat bake loaded with juicy blueberries and a crunchy almond topping.

Ingredients

  • 2 medium bananas, mashed
  • 2–3 tbsp sugar-free maple syrup
  • 1½ cups almond or light milk
  • 2 cups quick oats
  • 30g vanilla protein powder (True Vegan brand preferred)
  • 1 tsp baking powder
  • 140g frozen blueberries
  • 50g flaked almonds
  • To serve: High protein yogurt

Method

  1. Preheat oven to 180°C.
  2. Mash bananas in an ovenproof dish, then stir in maple syrup, milk, oats, protein powder, and baking powder.
  3. Fold in frozen blueberries and top with almonds.
  4. Bake for 40 minutes or until golden brown.
  5. Optional: Dust with a little icing sugar before serving.
